If you’ve watched Charlie and the chocolate factory, you would certainly know that The inspiration for Willy Wonka's infamous Inventing Room, with its burbling machines and Everlasting Gobstoppers came from an unlikely source:School!

Each year, Roald and his friends would be sent a number of Cadbury's latest chocolate inventions to test out. They would arrive in plain packaging, but they were always full of delicious chocolate treats and the boys were invited to share their thoughts on each and every one.

It was then that it struck me- Inside the Cadbury’s Chocolate Factory, there must be an inventing room, a secret place where men and women spent all their time playing around with sticky boiling messes of sugar and chocolate, concocting fascinating formulations.

I wanted to go for an offbeat career path.I joined Lady Irwin College, University of Delhi (2017-2020) to pursue my dream, learn something I am so passionate about.It includes basic and applied biology, microbiology, chemistry, math, business, engineering, physics, and many other disciplines.

A food scientist’s goal is to make safe, high quality food products that are profitable to all segments of the food industry. We had a course on New product Development, wherein we actually developed a product from the scratch to make it fit to be sold in the market. We had nutrition lessons, to plan the diets of different people and cook them in the lab.

I do Sensory reviews for Burger King, McDonald’s, Haldiram, bakeries, coffee and tea and I’ve developed cranberry crackers and popcorn. I also led a tasting panel for tasting Burgers - It’s no rocket science but the ideal procedure to taste a burger and why the ingredients are stacked like that and what kind of a patty should go in there etc.

In 2019, I applied for the ‘Coolest Summer Job- season 3’ program by HAVMOR Ice Creams and was fortunate enough to have gotten selected amidst the top 10 winners.

I got a chance to live my dream of Charlie and the chocolate factory in an ice cream factory for 3 days .It was raining Ice Cream,Quite literally!

I tasted somewhere around 200 flavours and created flavours that will be sold pan India with celebrity Chef, Saaransh Goila of the Famous Goila Butter chicken. That’s how I became the Chief Tasting Officer of one of the finest brands of Ice Creams in India.

Soon after, I got an internship with Theobroma, the smell of gooey brownies and bread filled me with warmth and comfort because I worked in the central kitchen overlooking all the processes starting from raw materials to the dispatch of final products. The best part was always evaluating the Samples before they got dispatched.

In order to guarantee consistent sensory quality, it is very important for manufacturers to know and control the characteristics such as odor and taste profiles of their products. This requires a fast but precise food analysis.

In Feb 2020, Internshala launched a campaign called-’The Greatest Tasting Internship’. There were many applicants and I was sceptical if I would make it through. Few days later,I got a call from Internshala saying that I was selected and that I should pack my bags to embark on a 3 days tasting trip to experience the rich culinary heritage of Delhi-NCR.

We started off in Old Delhi with Mr Anubhav Sapra, the founder of Delhi Food walks and ended the experience at Marriott- Gurgaon with the executive Chef, Mr. Balvinder Pal Singh Lubana. From authentic Old Delhi food to fusion food to what not, there was nothing that we missed.

The journey hasn’t been easy but it has been fun because I’ve always received such warmth. I’d say, learn from the experiences. I didn’t know how to cook 3 years ago, so when I was asked to prepare a dish in the lab, I was in a very precarious situation. But today, I’ve come as far as to formulating products.I’ve taste tested for Marriott Gurgaon, Plum,Imperfecto and many more.Presently, I am the official taste tester of Rad Bakers.

My food exploration journey still continues, whenever I travel to a new state or city, the first thing that I do is- I checkout the places and things to eat.

A lot of people ask me about what it takes to become a taster, I’d say,You need that degree in food science or nutrition in order to understand how different foods pair,the role of ingredients, the flavours, aroma, aromatics etc.

Even if you don’t have a degree, and you’re passionate and think that you’ve got the skills to identify the spices present in a seasoning, the food industry awaits you.
